About P'Jae

Born and raised in Thailand, P'Jae has spent her career in hospitality, restaurant management and professional kitchens before becoming Partner and Head Chef at Dar Mansour.

Living and working on Koh Phangan has given her an in-depth understanding of the island, its food scene and its evolving community. Every week she explores new restaurants, follows local producers, works with suppliers and welcomes travellers from around the world.

Although Dar Mansour celebrates Moroccan cuisine, her role goes far beyond the kitchen. She helps visitors discover the island itself — its neighbourhoods, cafés, beaches and restaurants — through first-hand local knowledge gained from daily life on Koh Phangan.

As Head Chef, she also works closely with Maïja to faithfully reproduce traditional Moroccan recipes while adapting them to the realities of sourcing exceptional ingredients in Thailand.
